Warm Weather Eating: Spicy Citrus Pork Salad

When the weather is warm, you probably don’t want to heat up your kitchen fixing dinner. Turn to this main course salads to make a satisfying and easy supper for your family. 

For the salad:
1 pound pork tenderloin, cubed
2 teaspoons Cajun seasoning
2 tablespoons olive oil
1 romaine lettuce heart, chopped
1 can mandarin oranges, drained
1 cucumber, seeded and chopped
2 cups shredded coleslaw mix
1/2 cup sliced almonds

For the dressing:
2/3 cup olive oil
1/3 cup balsamic vinegar
1/4 cup chopped cilantro
1 tablespoon lemon juice
1 tablespoon orange juice
Salt and pepper to taste

Coat the pork tenderloin cubes in the Cajun seasoning. Saute pork in the olive oil in a large non-stick pan about 8 to 10 minutes or until cooked through. Let the pork cool. Toss all the ingredients for the salad except the almonds in a large bowl. In a small bowl, combine all the dressing ingredients. Pour the dressing over the salad and toss to combine. Top with the almond slices. Serves 5.
